¡Cómo disfruto de el verano!, creo que humanamente es imposible no desear que ésta estación  llegue, te sientes guapa, te apetece estrenar vestiditos y bikinis nuevos y explorar hasta el último rincón de cualquier lugar al que te arrastren, rodearte de esa gente que te transmite todas las cosas buenas, llenas de vitalidad con las que sientes que estar vivo tenía un significado más allá de lo que creías y que si no te sientes así en el futuro siempre hay algo que debes cambiar para sentirte así todos los días.

How much I enjoy summer!, I think it’s humanly impossible not to wish that this season comes, you feel beautiful, you feel like you want to show for the first time your dresses and new bikinis and explore every corner of any place you you visit, surround yourself with those crazy people, full of vitality with little things meaning beyond than what you thought and if you do not feel it in the future there is always something that you must change in order to feel happiness all day.

Un sitio bonito, en el que disfrutar de las calles y de la gente, de los colores y la temperatura y que a mi me encanta. Un lugar que hay que conocer para poder opinar y no quedarse en la superficie, en la farándula o en el tópico típico.

Tarta de lima vegana by Neely Wang

Raw Vegan Lime Tart by Neely Wang

INGREDIENTS:

Crust
1 cup dates
1/3 cup walnuts
1/3 cup cashews
1/3 cup almonds
1 teaspoon vanilla extract

Blend crust ingredients well in a food processor until mixture is sticky.  Press into a tart pan and place in the refrigerator while preparing filling.

Cashew Cream
2 cups raw cashews (soaked for at least 2 hours)
1/4 -1/2 cup lime juice + 1 teaspoon lime zest (depending on desired lime flavor intensity)
1/4 cup honey
2 teaspoons vanilla
pinch of salt
1/4 cup water (adjust according to desired consistency)

INSTRUCTIONS:

Blend cashew cream ingredients in a high speed blender until smooth. Pour over crust and garnish with lime wedges. Enjoy!

Vegan Chai ice cream by Minimalist baker

 INGREDIENTS
  • 1.5 cups raw cashews, soaked for 4-6 hours (or overnight), then drained
  • 1 cup light coconut milk.
  • 3 packets chai tea.
  • 1/4 cup coconut oil, melted.
  • 1/4 cup agave nectar or maple syrup.
  • 1/4 cup cane sugar.
  • 1 tsp pure vanilla extract.
  • 1/2 tsp each cinnamon and ginger powder.

INSTRUCTIONS:
  1. Set your churning bowl in the freezer the night before to chill. Soak your cashews the night before as well, or for at least 4-6 hour before blending.
  2. When ready to prepare ice cream, steep your chai tea in 3/4 cup boiling water for at least 10 minutes. It should be very strong. Remove tea bags, squeezing out excess tea, and let cool in the fridge.
  3. In the meantime, drain cashews and measure out other ingredients.
  4. Add tea and all remaining ingredients to a blender and blend until creamy and smooth – about 3-4 minutes, using liquify if you have the option. Taste and adjust sweetness/flavors as needed.
  5. Add mixture to your chilled ice cream maker bowl and churn according to manufacturer’s instructions until thoroughly chilled, about 45 minutes. It should resemble thick soft serve.
  6. Transfer to a freezer-safe container, cover and freeze until hard – at least 6 hours, preferably overnight. Will keep in the freezer for up to a week.
